Though El Cisne Azul means “blue swan” in Spanish, most Madrileños know this unassuming establishment as the “mushroom bar,” where the owner Julian Pulido serves up mushrooms in dozens of varieties year-round. Typical Spanish fare is paired with succulent mushrooms—fried eggs are served with trumpet mushrooms,tricholomas with lamb, and pin-heads with foie gras. Don’t expect five-star treatment—the service, much like the interiors, is wonderfully no frills. Pro tip: If you can, make a reservation at the original location at Calle de Gravina 27, rather than the sister restaurant down the street.
